  • Chesnutt mushrooms (You can add wild mushrooms)
  • Flour
  • Butter
  • Fresh thymes
  • Puff pastry
  • Egg yolks mixed with water
  • Prosciutto
  • Dry white wine

Step 1

Heat the oven to reach gas 7/fan 200C/220C.

Step 2

Place your beef wellington on a roasting tray and brush with olive oil. Use pepper for seasoning and roast for 20 minutes medium heat or 15 minutes medium-rare. Once the meat is cooked to your satisfaction, remove it from the oven and allow it to cool for at least 20 minutes. Thereafter, place it in the fridge for another 20minutes.

As your beef sits in the fridge, prepare your chestnut mushrooms. Ensure you slice them into fine pieces. You can also use a food processor to prepare your mushrooms. But ensure they have a coarse texture like that of breadcrumbs.

Step 4

Pour your olive oil and butter in a pan under medium heat and stir fry the mushrooms. Add fresh thyme and allow to cook for around 10 minutes. Once the mixture has become soft, then it is cooked.

Over the cooked mushroom mixture, pour the dry white wine and leave it for about 10 minutes to allow the wine to be absorbed. To check whether the mixture is ready, it ought to retain its original shape. Use the flour to dust your work surface and roll out two strips of puff pastry. One strip should be thicker than the other. The thinner strip should be placed on a non-stick baking sheet. Thereafter, unwrap the beef from the cling film and place it on the thin strip.

Apply the egg and water mixture on top and on the sides of the wrapped beef. Also, apply the mixture on the edges of the pastry. Once the egg mixture has been properly applied, use the thicker pastry strip to cover the wrapped beef. For accuracy, use a rolling pin. As you cover the beef, ensure you gently press on the sides to make it airtight. Once the beef is fully covered, trim the edges and seal using a spoon’s edge, or a fork. Be cautious when trimming and sealing the beef to avoid messing up the pastry.

Refrigerate the beef wellington for 30 minutes to 24 hours. Thereafter, apply the egg Yolk mixture and place the beef in the oven for at least 25 to 30 minutes until it turns golden brown. Once cooked, allow it to settle for at least 10minutes before serving. The essence of allowing the beef to settle is to enable it to retain its juices.
